Pomegranates in my Music, in My Syrup and on My Buttermilk, Pecan and Banana Pancakes

After my experience with pomegranate gastrique I was left with two things. First, there was a half bottle of pomegranate juice in my refrigerator that needed to be used. Second, I wanted to give the gastrique process another go so I could begin honing my skills for the gastrique world championships. I’m going to rule that s**t.

Somewhere in the space/time/minus the vinegar continuum that is making gastrique lies molasses and syrup. To not overdose the gastrique thing but still get in the necessary practice I decided to make a pomegranate syrup to pour over buttermilk, pecan and banana pancakes. I based the syrup completely on an Alton Brown recipe that was created in outer space. I halved the recipe to make up for my lack of a full bottle of pomegranate juice.

The pancakes, adapted from a Cooking Light recipe, went something like this:

Buttermilk-Pecan-Banana Pancakes with Pomegranate Syrup

-1 cup flour
-1 Tbs. sugar
-1/2 tsp. baking soda
-1/2 tsp. baking powder
-1/2 tsp. ground cinnamon
-1/4 tsp. salt
-1/8 cup uncooked Farina
-1 1/4 cups vegan buttermilk (use almond milk, dissolve lime juice in it, let sit ten minutes)
-1 Tbs. vegetable oil
-1/2 tsp. vanilla
-1 egg (or equivalent in vegan form)
-1 banana
-1/4 cup crushed pecans
-pomegranate syrup

1. Make the syrup.

2. Combine dry ingredients (flour, sugar, baking soda, baking powder, cinnamon, salt, Farina) in a large metal bowl.

3. Combine the wet ingredients (vegan buttermilk, oil, vanilla, egg). Add to the flour mixture and stir until everything is smooth.

4. Fold in the banana and pecans.

5. Heat a griddle. Drop 1/4 cup batter bombs on the hot pan and heat until bubbles appear all of the top of the cake. Flip and do it again.

6. Cover your cakes in syrup. Stick a fork in them.

    • It is great because you can use it for syrup, then for molasses and end it with some candy.

  • I dunno man… gastrique is such an ugly word… sounds like a stomach illness or something.

    Still, that syrup looks really good! I vote to rename it.

    As for those tunes, I’d totally whip them up right now if I didn’t already have music blaring. Have to remember to give them a go at a later time…

    • I think the ugliness is part of the reason why I love the word so much. It doesn’t sound appetizing in the least. I’m going to cover my food in a gastrique. Has such an unclean feel to it.

      • Ewwwww… it almost sounds like you just said you were going to puke all over your food. Alright… let’s move on, shall we? Now I think I’ll never be able to have gastrique after all. Seriously, who ever thought of naming something one would actually put in their mouth such an ugly, unappetizing name? And did I ever mention I’m a big fan of clean eating? ;)

        I lied though… I still want to try that darn gastrique! I’ll just call it something else, that’s it! =D
