Pizza Stuffed Pretzels Morphed by Re-Enactment and Lizette Lizette

When I was younger there were many Sunday afternoons that found me at Johnny’s Restaurant ordering a greasy hamburger and onion rings while in the company of my grandparents. Inevitably a group of Amish teens that were in the midst of rumspringa would come strolling in. These guys were usually “dressing English,” smoking cigarettes and chewing on some sort of stuffed pretzel. They’d head straight to the jukebox and request Guns N Roses, Def Leppard or AC/DC. Afterwards the teens headed out to the parking lot and practiced squealing the tires of their old school mustangs.

These were the images that flashed through my head as I worked on my own version of stuffed pretzels. My original intention was to go the route of a veggie cheesesteak but an abundance of Italian cheeses and tomato sauce quickly morphed the recipe into a pizza. To make this simply go with this pretzel recipe (leaving out the cheese and jalapenos). When you get to the point of forming the dough, roll it out and layer the onions, peppers, cheeses and sauce on top. Fold the dough over and wrap it tightly inside. Put it into an inch of water with baking soda for a minute then place it on a baking sheet and bake.

  • when you said you were dreaming of stuffed pretzels (on twitter) i was hoping all the time for something sweet. now that the thing turns out salty, i’ll have to dream of a sweet variation. :> the main recipe looks possible to me though, only the geometry is a bit tricky :P

    strangely, those pretzels look like i’ve baked them.. upside down in shame… :>

    • They are pretty much an upside down in shame creation. My yeast didn’t rise like it should’ve. Damn old yeast. A sweet version you say? Hmmm…dessert should be pretty easy. I’ll get to it.

    the things which are different in the recipe is, i used less salt, added milk to the water (vegans cud possibly add soy milk?). after making long cylinders from little dough balls, with help of a rolling pin, we made flat bands from those and spread some raspberry marmalade on them. then try and join the ends so it is a stuffed cylinder. and then tried to give it the pretzel shape :] on it i sprinkled sugar instead of salt and some cinnamon.

    the result, nice consistency, could be a little bit sweeter, maybe addition of a little sugar in the dough too could help the next time. and use of some cacao filling or apple sauce would be of better taste? addition of extra veg. oil would definitely make it irresistible. :>

    the thing was so tempting we could not wait if the thing was better when a bit cooler.
